By soaking the oatmeal overnight not only are you reducing anti-nutrients, but your oatmeal will cook up in minutes in the morning. A true instant oatmeal, done the old-fashioned way! We finally found a way to make soaked oatmeal that we can really enjoy by the use of lemon juice, which gives a much more mild taste. We also love to add chia seeds to our oatmeal (easily soaked overnight with the oats). This adds not only omega 3’s, protein and nutrition to our oatmeal, but we love the texture it gives.

I have received several requests to share my experience with coconut kefir, which I am very happy to do. Next time I make it I will try to photograph the actual process, but today I would like to share about how it has benefited me.
What it is
Coconut kefir is made from the juice (also called coconut water) of young coconuts -not the mature coconuts with the brown hairy shell. This juice is then fermented by either using a kefir packet, or a water kefir grain. This converts the sugars in the juice into probiotics. This creates a bubbly, tasty drink that Joel and I really enjoy.

Doing Your Best while Extending Grace
Sometimes what we hope to accomplish meets reality. You had high hopes for serving delicious, nourishing hot meals three times a day to your family (all nicely fitting into your food budget of course). Then your menu plan falls apart, the kids are all sick, you are running around like crazy and you serve frozen burritos five days in a row. A sense of hopeless disappointment comes. You have failed your own expectations.
Or, you are new to this type of cooking. Each change feels major. While you are excited about change one, you haven’t made the next five changes. Your other “Nourishing Tradition” friends won’t eat with you, because they know that you aren’t quite “up to par”. Your excitement cools right along with the friendship
